Homemade Breakfast Sando Supremo

Homemade bagel? Check. Homemade bacon? Check. Add a fried egg and some hot sauce and take a pic. Eat, post the pic on social media, sit back and wait for the “drool” comments. Now take a nap. Wake up in 2 hours and have a bloody mary, you deserve it.

For The Bagel -

1 cup (5 oz) unbleached all purpose flour

2 teaspoons baking powder

3/4 teaspoon kosher salt

1 cup non-fat Greek yogurt (regular yogurt doesn’t work as good)

1 egg white, beaten (or a whole egg if your lazy)

optional toppings - whatever the hell you like on bagels. Jalapeno & Cheddar is 113% guaranteed to be good.

Preheat the oven to 375 and prep a baking sheet. In a bowl mix together the flour, baking powder, salt, and yogurt. Divide the dough into 4 balls, and dust a work surface with some more flour. Kneed the dough. 12-15 turns or so until it’s tacky but doesn’t stick to your hands. Roll the balls into ropes, then connect them in a circle to form a bagel. Brush the bagels with the egg wash. Bake it now! 25 minutes. Let it rest for a bit after, like 10-15 minutes. Then do whatever you want with it, or……

Fry up some homemade bacon. Cut the bagel in half, sear it on the pan in the bacon fat. Then fry an egg in the same spot. Combine, add some salt and pepper, some hot sauce if you so desire (you should always desire), eat, nap, bloody mary.
