Uncle Joe’s Guacamole 1.0

Guacamole isn’t rocket science. A nice avocado, salt, and lime is really all you need to get started. If you normally just buy the pre-made guacamole from the grocery store we need to have an intervention. This recipe is a very simple one. It’s kind of like basic quacamole. We’re putting stuff in it, but we’re not going crazy. We’re going for more flavor and texture. We’re basically just adding pico de gallo.

What you’ll need -

  • 1-2 large avocados

  • 1/4 white onion - diced

  • 1 small tomato - diced

  • 1/2 bunch cilantro - diced

  • 1 lime cut in half

  • salt to taste

Let’s talk about getting that pit out of the avocado. If you use a spoon and dig it out Uncle Joe will get angry. That’s not how to do it. Grab your kitchen knife and give a gentle little chop into the pit. Enough so it sticks into it. Then twist, and the pit will pop out still attached to the knife.

Use your thumb to safely push the pit off the knife. Don’t be a dumb dumb and try and pull it off. You’ll end up with blood all over the avocado. Maybe an eyeball. That won’t taste good.

Use a spoon to get the avocado out of its skin. Use a fork to mash it before adding the other ingredients. Once it’s all in the bowl, mix it up and add salt and lime to taste. Don’t be afraid to use a fair amount of lime. The acidity it adds is important. When it’s ready put it on stuff, like chips or tacos.
